Oolong Tea

Oolong means semi fermented. They are manufactured very similar to black teas, but are given a much shorter withering period, a light roll (according to the type of oolong being made), and then allowed to ferment only until the edges of the leafs start to turn brown. The tea is then fired which arrests the fermenting process and captures the interesting character associated with Oolong tea.

The best China oolongs come from Fujian Province - in the Wuyi Mountains area since Fujian province is the historical 'birthplace' of China Oolongs.

Oolong Tea generally has higher anti-oxidant levels than standard black teas and is frequently used in Chinese medicine. It is reputed to raise your metabolism naturally as the tea leaf is thermogenic. If you do not change your diet other than drinking three cups a day you could still lose up to 7lb in a year.

Traditional Tea Brewing Method

Oolongs teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. The tea is then re-infused and tea is poured to the lucky guests after about 1 minute. The leaves may be re-infused several times, with each resulting infusion yielding different liquor from the preceding cup.

Milk not recommended for oolong tea.

Simple Hot Tea Brewing Method

Put 1 teaspoon of tea per cup into your teapot. Heat water to 90°C and pour over the leaves. Leave to infuse for 3-6 minutes. Serve and enjoy.

Iced Tea Brewing Method

Make as for hot, but add more tea. When the tea has cooled, pour over ice.  It is important to make it a little stronger as the ice will water it down.
Alternatively, you can place the tea in a jug and add cold water. Leave to infuse for a few hours (or overnight in the fridge) strain and enjoy. Cold brewing will give a smoother taste.
