Hot Tea Brewing Method
Place one teaspoon of tea per cup into your teapot (add a little more for a more intense flavour). Boil water to 90Â°C and pour over the tea. Leave to brew for 3-7 minutes then serve 'straight up' and enjoy the rich character of this tea.
Add sugar to taste.
Or take the edge off for a smoother taste experience by boiling the water to 100Â°C and adding a little milk.
For a single serving, try brewing straight in your cup by using a tea infuser. Just follow your preferred method above, place 1 spoon of tea into the infuser, pop it in your cup, and pour the hot water over the tea. Leave to brew for 3-7 minutes, then remove the infuser before drinking. Add milk and sugar to taste.
Iced Tea Brewing Method
Make as for hot, but add extra tea - a general rule of thumb is to double the amount used. When the tea has cooled a little, pour over ice. It is important to make it a little stronger as the ice will water it down.
Alternatively, you can place the tea in a jug and add cold water. Leave to infuse for a few hours (or overnight in the fridge) strain and enjoy. Cold brewing will give a smoother taste.
