White Loose Leaf Tea
Country of Origin: Sri Lanka.
Cup Characteristics: The all natural bergamot oil with Pai Mu Tan white tea gives a lively and tantalising Earl Grey.
Infusion: Straw, yellow.
Ingredients: Pai Mu Tan, cornflower petals, natural flavours.
Traditionally Earl Grey was a blend of Chinese and Indian teas scented with the oil from the citrus fruit bergamot - a sort of orange. While Earl Grey black tea is the namesake of Charles, the 2nd Earl of Grey, the white variant is a more modern creation. The Earl would have loved this one.
It's now time to throw away the teabags and try a great taste experience. You may not believe the difference that comes with using premium tea and brewing in the old fashioned way. Just as coffee has seen a revival with millions of people changing from instants to fresh roast beans so also has tea been seeing a revival with new tea houses opening around the country, and the world.
Hot Tea Brewing Method
When preparing by the cup, this tea can be used repeatedly - about 3 times. The secret is to use water that has been boiled and then allowed to cool to 80°C (180°F). Place 1 teaspoon in your cup let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on and so on - until the flavour of the tea is exhausted.
Alternatively as with all top quality teas, scoop 2-4 teaspoons of tea into the teapot, pour in boiled water that has been freshly drawn and allowed to cool slightly, (previously boiled water has lost most of its oxygen and therefore tends to be flat tasting), steep for 2-4 minutes (to taste), stir (virtually all the leaves will sink -the flowers will float), pour into your cup.
Milk and sugar not recommended since white tea is normally enjoyed straight-up.
Iced Tea Brewing Method
Make as for hot, but add extra tea - when the tea has cooled a little, pour over ice. It is important to make it a little stronger as the ice will water it down.
Alternatively, you can place the tea in a jug and add cold water. Leave to infuse for a few hours (or overnight in the fridge) strain and enjoy. Cold brewing will give a smoother taste.
