Oolong means semi-fermented. They are manufactured very similarly to black teas, but are given a much shorter withering period, a light roll (according to the type of oolong being made), and then allowed to ferment only until the edges of the leaves start to turn brown. The tea is then fired which arrests the fermenting process and captures the interesting character associated with Oolong tea. Se Chung Oolong has a shorter fermentation time than other Oolongs from Fujian province resulting in more subtle Oolong character. There are delicate notes of Ti Kuan Yin style flavour combined with a slight herbaceous green character. This is why this particular tea is sought after - delicate flavour notes of a top Oolong combined with green tea characters. 

The best China Oolongs come from Fujian Province - in the Wuyi Mountains area since Fujian province is the historical birthplace of China Oolongs. 

Oolong Tea is reputed raise your metabolism naturally as the tea leaf is thermogenic. If you do not change your diet other than drinking three cups a day you could still lose up to 7lb in a year.

Traditional Brewing Method

Oolong teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. The tea is then re-infused, and tea is poured to the lucky guests after about 1 minute. The leaves may be re-infused several times, with each resulting infusion yielding different liquor from the preceding cup.

Add sugar to taste. Milk not recommended for oolong tea.


Simple Hot Tea Brewing Method

Put 1 teaspoon per cup into your teapot, and add 1 more to the pot (add a little more tea for a more intense infusion). Heat water to around 80-90°C and pour over the tea leaves. Leave to infuse for 3-6 minutes, then serve and enjoy.

This tea can be brewed in a tea infuser right in your cup for a single serving.


Iced Tea Brewing Method

Make as for hot, but add extra tea - a rule of thumb is to double the amount used. When the tea has cooled a little, pour over ice. It is important to make it a little stronger as the ice will water it down.

Alternatively, you can cold brew the tea by placing the tea in a jug and adding cold water. Leave to infuse for a few hours (or overnight in the fridge) strain and enjoy. Cold brewing will give a smoother taste.

To make 1 litre of iced tea: Place 6 teaspoons of tea into a teapot or heat resistant jug. Pour half a pint (275ml) of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving jug with cold water. Pour the tea into your serving jug while straining the leaves. Add ice and top up the jug with cold water. Garnish and sweeten to taste.

Beautifully light green tea, perfect for morning or evening

I've been drinking this tea for as long as I've been drinking green tea, once you find a blend like this you'll never be able to drink those rotten big name tea bags again. This is delightfully light when brewed for the perfect time and makes a ghreat post evening meal drink to aid with digestion or just a great drink while relaxing. I personally prefer Simpli Special's Pu Ehr for mornings, it's strong and earthy, but this Oolong is my go to evening drink. My wife has recently converted as well (after years of moaning), truly wonderful tea
