Oolong Rice Pudding Tea

Whether it brings back childhood memories, or it’s still your favourite dessert: rice pudding with sugar and spice puts a smile on anyone’s face. Our semi-fermented Ti Kuan Yin, with its unique, slightly creamy flavour is enhanced with Cinnamon and a delicate dessert note. Because its good for you, feel free to have second helping ....or even a third!
Add sugar to taste. Milk not recommended for oolong tea.
Simple Hot Tea Brewing Method
Put 1 teaspoon per cup into your teapot, and add 1 more to the pot (add a little more tea for a more intense infusion). Heat water to 90°C and pour over the tea leaves. Leave to infuse for 2-5 minutes, then serve and enjoy.
This tea can be brewed in a tea infuser right in your cup for a single serving. Follow instructions as above, and remove the infuser from your cup before drinking and rest it on a saucer. The leaves are then ready for your next brew if re-infusing.
Oolong tea can be re-infused 2-3 times. As a recommendation, increase the temperature by 5-10°C for each subsequent brew to get the most out of your tea leaves.
Iced Tea Brewing Method
Make as for hot, but add extra tea - a rule of thumb when preparing fresh brewed iced tea is to double the amount of tea leaves used. When the tea has cooled a little, pour over ice. It is important to make it a little stronger as the ice will water it down.
Alternatively, you can cold brew the tea by placing the tea in a jug and adding cold water. Leave to infuse for a few hours (or overnight in the fridge) strain and enjoy. Cold brewing will give a smoother taste.
To make 1 litre of iced tea: Place 6 teaspoons of tea into a teapot or heat resistant jug. Pour half a pint (275ml) of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving jug with cold water. Pour the tea into your serving jug while straining the leaves. Add ice and top up the jug with cold water. Garnish and sweeten to taste.
Traditional Brewing Method
Oolong teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. The tea is then re-infused and tea is poured to the lucky guests after about 1 minute. The leaves may be re-infused several times, with each resulting infusion yielding different liquor from the preceding cup.
