What is Sencha?
As with many things in Japanese culture, the overwhelming care and attention that is put into their tea is second to none.  This touch can be felt in everything from shade-growing on pristine mountainsides, the unique steam-processing and finishing with the elegant final brewing of the leaf.  Japanese teas truly embody beauty, detail and practicality.
The deeply green and richly vegetal Sencha has long been the most popular style of tea in Japan.  This pack contains not only a wonderful Shizuoka Prefecture Sencha but also some close cousins and variations on the form that we think you will enjoy exploring.  So, as they say in Japan, Itadakimasu!  Lets drink!

 

Country of Origin: Japan, Shizuoka Prefecture.
Cup Characteristics: Tending light liquoring, smooth with reasonable depth and body.
Infusion: Pale yellow-green.
Ingredients: Green Sencha tea.

  Country of Origin: Japan, Kagoshima Prefecture.
Cup Characteristics: Roasted Japanese Bancha tea with warming and soothing character and chestnut-like toast notes.
Infusion: Tending orange in colour
Ingredients: Luxury roasted Japanese green tea.

 
"Popcorn Tea"
Country of Origin: Japan, Kagoshima Prefecture.
Cup Characteristics: Light and delicate liquor with toasty flavour, tending sweet.
Infusion: Light golden yellow liquor.
Ingredients: Steamed green tea with toasted rice and decorative plain popped rice.

 
Green Stem Tea
Country of Origin: Japan, Kagoshima Prefecture.
Cup Characteristics: Distinctive Japanese green profile. Cup tends lightly vegetative leading to a beguiling finish loaded with malt.
Infusion: Tending yellow-green, somewhat pale.
Ingredients: Green Sencha tea stems.

 
  Country of Origin: China / Ceylon.
Cup Characteristics: The tea tends light liquoring, floral fresh and smooth with reasonable depth and body.
Infusion: Pale yellow-green.
Ingredients: Green Sencha tea, sour cherry pieces, natural flavours.

Hot Tea Brewing Method
  1. Bring fresh cold water to a rolling boil, then allow to cool to between 80 and 90°C
  2. Place 1 teaspoon for each cup into the pot (add a little more for a more intense flavour).
  3. Pour the water into the pot, cover and allow to steep for 3 to 7 minutes, to your taste.
  4. The longer the steep, the stronger the brew.
  • The leaves can be re-infused 3 or 4 times. Many believe the 2nd or 3rd infusions are the best.
  • Milk and sugar are not normally added to green tea.

 
Iced Tea Brewing Method
  1. Bring fresh cold water to a rolling boil, then allow to cool to between 80 and 90 degrees

  3. Pour the water into the pot, cover and allow to steep for 3 to 7 minutes to your taste.
  4. Remove leaves and allow to cool. Add ice to fill.
  • The leaves can be re-infused 3 or 4 times. Many believe the 2nd or 3rd infusions are the best.


 
Tea in Britain
Britain is known as a nation of tea drinkers, despite the fact that the British were fairly late on the tea scene in historical terms. Tea was first brought to Britain in Dutch ships and soon proved so popular that the British government wanted to take the control away from the Netherlands. This was supposedly achieved by banning the import of tea on anything but British ships. To get around this, tea was first taken to Holland where it was transhipped into British ships.

The history of tea is fascinating, look up references to High Tea, The Brown Betty, The American War of Independence, The Opium Wars. A fascinating subject.

The health benefits of tea were well known there is a reason the standard English response to anything was to put the kettle on! But as well as the immediate results, tea has been proved to have long-lasting benefits. It was proclaimed that: Tea makes the body healthy and lusty.  Tea is declared to be the most wholesome; preserving perfect health until extreme old age. Whilst this may have been guesswork back then, the health benefits of tea are now well documented. High levels of antioxidants and slimming benefits are just two of them.

Just as coffee has seen a revival with millions of people changing from instant to fresh roast beans, so also has tea been seeing a revival with new tea houses opening around the country, and the world.
